WHere is a simplified version of a drink from our latest menu. It's a party-sized pre-mixed that is loaded full of essence of the festive period, which makes it perfect for hosting a festive gathering. Reserve the remaining citrus syrup you can use for brunch beverages, puddings, or to mix additional servings of the drink.

For the Citrus Syrup (makes 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Citrus Syrup: Place the listed components inside a pot, heat until it reaches a simmer, stirring to dissolve. Next, turn off the heat and leave to cool completely. Transfer into a sealable bottle, cap it keeping it in the fridge, it can be stored for up to four weeks.
Preparing the Cocktail Base: Combine the specified liquids into one big jug, allow it to infuse for one hour, then filter it preferably using muslin, making it completely strained.
For serving: Add 85ml of your batch mix into a stirring glass packed with ice, and agitate lightly for one minute to cool it down. Strain to a chilled martini glass or a similar vessel, decorate with a few cranberries adding the final touch by giving it a quick spritz of mandarin oil above the glass.
